Complete Guide to Kitchen Knife Care
A good set of kitchen knives is an investment that can last decades — or even a lifetime — with proper care. The way you clean, store, and sharpen your knives has more impact on their longevity than the brand or price point.
Wash by Hand
Never put kitchen knives in the dishwasher. The high-heat drying cycle, aggressive detergents, and metal-on-metal contact inside the machine dull the blade edge, pit the steel, and loosen handle rivets. Wash in warm soapy water, rinse, and dry immediately with a towel to prevent rust spots.
Store Safely
A knife block, wall-mounted magnetic strip, or in-drawer edge guards are all safe storage options. Tossing knives loose into a drawer is dangerous and ruins the blade edge faster than any cutting surface can. If you use a block, choose one with slots at a downward angle so the blade edge does not rest on the wood.
Use the Right Cutting Surface
Bamboo and end-grain wood boards are the kindest surfaces for knife edges. Plastic is acceptable. Glass, ceramic, marble, and granite cutting boards are marketed as hygienic but destroy edges quickly — avoid them for any regular knife work.
Honing vs Sharpening
A honing steel does not sharpen — it realigns the microscopic edge of the blade that folds over during normal use. Steel before each use to maintain sharpness. Sharpening (on a whetstone or pull-through sharpener) removes metal to create a new edge. Most home cooks need to sharpen two to four times per year depending on use.
Whetstone Basics
Soak a 1000-grit whetstone for ten minutes. Hold the blade at 15 to 20 degrees to the stone and make smooth pushing strokes along the full length of the blade. Finish on a 3000 or 6000-grit stone to polish the edge. A leather strop as the final step removes the burr and produces a shaving-sharp edge.
Signs Your Knife Needs Sharpening
If a knife slides off a ripe tomato instead of biting in, or crushes herbs instead of slicing cleanly, it needs sharpening — not more pressure. Forcing a dull knife is the primary cause of kitchen cutting accidents.
