How to Choose the Right Cookware Set

How to Choose the Right Cookware Set

Choosing the right cookware can feel overwhelming with so many materials, brands, and price points available. This guide breaks down the key differences so you can invest wisely and cook confidently.

Stainless Steel

The most versatile option for most kitchens. Stainless steel is durable, non-reactive to acidic foods, dishwasher safe, and works on all cooktops including induction. Look for tri-ply or five-ply construction — an aluminium core sandwiched between steel layers — for even heat distribution without hot spots.

Non-Stick

Essential for eggs, fish, and any delicate food that tends to stick. Modern PFOA-free coatings are safe and effective. The trade-off is longevity — non-stick pans typically last three to five years even with good care. Never overheat them and always use silicone or wooden utensils.

Cast Iron

Exceptional heat retention makes cast iron the best choice for searing steaks, baking cornbread, and deep frying. It requires seasoning to maintain its non-stick surface but improves with every use. Enamelled cast iron eliminates the seasoning requirement and adds vibrant colour to your kitchen.

Carbon Steel

The professional kitchen workhorse. Lighter than cast iron, it heats faster, develops a natural non-stick patina through seasoning, and handles extreme oven and stovetop temperatures. Ideal for woks, crepe pans, and high-heat searing.

What to Buy First

Start with a tri-ply stainless saucepan (3 qt), a frying pan (10 or 12 inch), and a stockpot (6 or 8 qt). Add a non-stick egg pan and a cast iron skillet when budget allows. With these five pieces you can cook almost anything a recipe requires.
